Bright, sweetly wheatgrassy and gorgeously fruity, our Pasolivo California EVOO is made from Mission and Manzanillo olives (California varietals, and thus the name) that are handpicked from our Paso Robles orchard. We crush the olives immediately in our own olive mill, and leave the oil unfiltered before releasing it. This year's California EVOO is our favorite of any harvest we've had from these varietals. This oil is bold and beautiful. Use it to finish a plate of pasta with herbs, to fry up a farm-fresh egg, or for dipping a crusty hunk of bread. Pour it over roasted peppers or fresh tomatoes with mozzarella. Good for up to 24 months, but best used early in its life.
