We pick the olives by hand, and press them within just a few hours, giving a freshness and intensity that makes our oils unique. Pasolivo can be used in salads with a rich balsamic vinegar, or as a finishing oil to drizzle over pasta, roasted potatoes, sautéed greens or a grilled steak. Certified extra virgin by the California Olive Oil Council, extremely low acidity. A very intense oil with a grassy nose, a pepper finish and that hint of bitterness that is the hallmark of Tuscan varietal oils. Good for up to 24 months, but best used early in its life.
