The Summer Citrus Avocado Salad incorporates our Citrus Olive Oil to help enhance the flavor of this go-to summer salad. The Summer Citrus Avocado Salad provides a combination of fruit, vegetables, and bright color combinations to bring this salad to life. All you need is one bite and you will be in love! - 4 cups arugula
- 1/2 cup blackberries
- 1/3 cup diced jicama
- 2 navel oranges, segmented
- 1 blood orange, sliced or segmented
- 1 avocado, sliced
- 2 tablespoons fresh orange juice
- 1 tablespoon fresh lemon juice
- 2 tablespoons Pasolivo Citrus Olive Oil
- 1 teaspoon honey
- 1/2 teaspoon red pepper flakes
- Salt & pepper to taste
- Almonds (optional)
- In a large bowl, add arugula, blackberries, jicama, segmented oranges, blood orange, and avocado. If you want some extra crunch, add almonds.
- In a small bowl, add orange juice, lemon juice, citrus olive oil, honey, red pepper flakes, salt, and pepper to taste. Whisk together until smooth.

This salad looks amazing and so simple to prepare! Thanks to Pasolivo and your marvelous olive oils, one can whip up a salad and feel confident that not only will it look spectacular but it will have great flavor not to mention being packed with good nutrients!
This is my go to oil for summer salads. I make a variety of dressings with it as well as include it in my array of breakfast breads -- banana, blueberry, etc. I also use it in a special marinade with pork chops. My friends and house guests love it. Needless to say, during the summer I go through it rather quickly.
