Full Product Description
These incredibly moist apple oat muffins are made with Pasolivo extra virgin olive oil. They're perfect for breakfast or an afternoon snack.
Ingredients
- 1 1/2 cups wheat flour
- 1 1/2 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1 1/2 tablespoons Pasolivo Sugar & Spice Blend
- 1 cup rolled oats
- 1 cup peeled and grated carrots
- 1 cup green apple, chopped
- 3/4 cup chopped pecans
- 1/2 cup dried cranberries
- 1/3 cup Pasolivo Cucina Extra Virgin Olive Oil
- 1 cup plain Greek yogurt
- 2 eggs
- Pinch of Pasolivo Kosher Flake Sea Salt
- 1 teaspoon almond flavoring
- 1/2 cup Pasolivo Orange Blossom Honey
Preparation
- Brush muffin pan with Pasolivo Cucina Olive Oil.
- Preheat oven to 400ºF.
- In bowl, combine flour, baking powder, baking soda, oats, Pasolivo Kosher Flake Sea Salt and Pasolivo Sugar & Spice Blend.
- Stir in apples, carrots, cranberries, and pecans.
- In separate bowl, combine Pasolivo Cucina Olive Oil, Greek yogurt, almond flavoring, eggs, and Pasolivo Orange Blossom Honey.
- Combine wet and dry ingredients.
- Spoon batter into muffin tin and bake 15-18 minutes or until inserted toothpick comes out clean.
