- 2 1/2 cups all-purpose flour
- 2 tsp baking powder
- 1 tsp Pasolivo Lemon Sea Salt
- 3/4 cup plus 2 tbsp Pasolivo California Extra Virgin Olive Oil
- 3/4 cup sugar
- 1/3 cup Pasolivo Orange Blossom Honey
- 2 tsp vanilla extract
- 2 eggs
- 3/4 cup buttermilk, divided use
- 1 cup blackberries, halved
- 1/2 tsp Pasolivo Blackberry Balsamic Glaze:
- 1/2 cup Pasolivo Orange Blossom Honey
- 1/4 cup brown sugar
- 2 tbsp Pasolivo California Extra Virgin Olive Oil
- 1/2 cup sliced almonds, toasted Whipped Cream:
- 1 cup heavy cream
- 1 tsp Pasolivo Orange Blossom Honey
Preparation
- Preheat oven to 350 degrees
- Grease 9" cake or springform pan, then line the bottom with parchment paper
- In a bowl, whisk together the flour, baking powder, and Pasolivo Lemon Sea Salt
- In a stand mixer, with a paddle attachment, combine Pasolivo California Extra Virgin Olive Oil , sugar, vanilla extract and Pasolivo Orange Blossom Honey . Mix until well combined, scraping the bowl occasionally
- Add eggs and mix until fully incorporated
- Add half of the flour mixture and half of the buttermilk. Mix until just blended. Repeat with the remaining flour mixture and buttermilk
- Drizzle blackberries with Pasolivo Blackberry Balsamic , then fold into cake batter
- Spread the batter evenly into the prepared pan. Bake 45 minutes. When done, a wooden skewer inserted into the middle should have a few moist crumbs attached to it
- Make the glaze in a small saucepan by whisking the Pasolivo Orange Blossom Honey , brown sugar, and Pasolivo California Extra Virgin Olive Oil over medium-low heat until the sugar is dissolved. Set aside.
- Remove the cake from the over and poke holes in the top with a skewer. Pour on half of the glaze. Spread the almonds evenly on top, then pour on the remaining half of the glaze.
- Whip the heavy cream with Pasolivo Orange Blossom Honey until soft peaks form. Serve whipped cream as desired
