These bite-sized appetizers deliver an indulgent combination of salty, tart, and sweet, with a dash of freshness from fresh basil and Pasolivo's Basil Olive Oil.
Ingredients

CRANBERRY BASIL SAUCE
- 6 oz. bag of fresh cranberries (half a bag)
- 1/3 C water
- 1/3 C white sugar
- 1 Tbsp. Pasolivo Basil Olive Oil
- ¼ tsp. ground ginger
- 1 large sprig of fresh basil, about 10 leaves
- ½ Tbsp. Pasolivo Winter Ambrosia Vinegar
- Pinch of Pasolivo Kosher Flake Sea Salt WHIPPED GOAT CHEESE
- 1/3 C plain goat cheese, softened
- 1/2 C mascarpone, softened
- 1 tsp. lemon zest
- Pinch of Pasolivo Kosher Flake Sea Salt CROSTINI
- 1 baguette, sliced diagonally, ½ thick (about 20 slices)
- ¼ C Pasolivo Basil Olive Oil Pasolivo Himalayan Pink Salt ASSEMBLY
- Pasolivo Basil Olive Oil
- Fresh basil, julienned
Preparation

MAKE THE CRANBERRY BASIL SAUCE
- In a medium saucepan, combine the cranberries, water, sugar, and Pasolivo Kosher Flake Sea Salt over medium-high heat. Bring to a simmer.
- Stir to dissolve the sugar. Add the Pasolivo Basil Olive Oil, ginger, and Pasolivo Winter Ambrosia Vinegar .
- Cook, stirring occasionally, until the cranberries begin to pop, 3 to 4 minutes. If the mixture begins to bubble and foam rapidly, reduce the heat.
- Add the sprig of basil. Continue to cook another 2 to 4 minutes over medium heat, until the mixture has thickened and almost all the cranberries have burst.
- Remove the basil and set sauce aside to cool, loosely covered.
- Set the oven to 450°F.
- On a large sheet tray, lay out all the slices of bread. Brush both sides with Pasolivo Basil Olive Oil.
- Bake for 5 to 9 minutes, until golden and crisp.
- Sprinkle with Pasolivo Himalayan Pink Salt and set aside to cool.
- Combine all ingredients for the whipped goat cheese in a medium bowl. Whisk until slightly aerated, about 2 minutes. Cover and chill in the fridge until ready for assembly.
- Smear about 1 tablespoon of whipped goat cheese onto each crostini, slightly concaved in the center to hold the cranberries.
- Spoon about 3 or 4 cranberries with sauce onto each crostini. Drizzle with Pasolivo Basil Olive Oil, and sprinkle with julienned basil. Enjoy!
