These curried veggies are a great appetizer with exotic flavors from our Pasolivo Central Coast Curry.
Ingredients
- 5 tablespoons Pasolivo Tuscan Extra Virgin Olive Oil
- 3 tablespoons Pasolivo Central Coast Curry
- 1 tablespoon Pasolivo Kosher Flake Sea Salt
- 1 pound potatoes, chopped large
- 1 pound carrots, chopped large
- 1 large red onion, chopped large
- 1/2 large head of cauliflower, chopped large
- 3/4 pound butternut squash, chopped large
- 1 1/2 cups canned cooked chickpeas, rinsed, drained, and dried
Preparation
- Preheat the oven to 400ºF.
- Toss the vegetables with the Pasolivo Tuscan Extra Virgin Olive Oil. Sprinkle with Pasolivo Central Coast Curry and Pasolivo Kosher Flake Sea Salt, tossing again to mix.
- Spread onto a large baking sheet and bake for 40-60 minutes, checking at about 35 minutes. The vegetables should be tender and lightly browned. Salt to taste. Pasolivo tip: These curried vegetables are great topped with the Olive Oil Yogurt Sauce.
