1 1/2 cups canned cooked chickpeas, rinsed, drained, and dried
Preparation
Preheat the oven to 400ºF.
Toss the vegetables with the Pasolivo Tuscan Extra Virgin Olive Oil. Sprinkle with Pasolivo Central Coast Curry and Pasolivo Kosher Flake Sea Salt, tossing again to mix.
Spread onto a large baking sheet and bake for 40-60 minutes, checking at about 35 minutes. The vegetables should be tender and lightly browned. Salt to taste.
Pasolivo tip: These curried vegetables are great topped with the Olive Oil Yogurt Sauce.
