In a small bowl, mix flour, baking powder, and salt. Set aside.
In another bowl, beat eggs and sugar until pale yellow, about 2-3 minutes. Stir in vanilla, yogurt, and remaining 3 tbsp Pasolivo Cucina Extra Virgin Olive Oil . Add flour mixture and stir until just combined.
Stir in remaining 1/2 cup fresh pineapple and coconut. Carefully spoon over pineapple in pan and even out. Bake until toothpick inserted comes out clean, about 25-30 minutes.
