  • 1/2 cup brown sugar
  • 5 tbsp Pasolivo Cucina Extra Virgin Olive Oil
  • 2 cup chopped fresh pineapple, divided use
  • 1 1/2 cup flour
  • 1 3/4 tsp baking powder
  • 1/4 tsp salt
  • 2 eggs
  • 3/4 cup sugar
  • 1 1/2 tsp vanilla
  • 3/4 cup Greek style yogurt
  • 2/3 cup shredded coconut
Preparation
  1. Preheat oven to 350 degrees.
  2. Mix 2 tbsp Pasolivo Cucina Extra Virgin Olive Oil with brown sugar. Then mix 1 1/2 cup pineapple. Spread over the bottom of an 8x8 pan.
  3. In a small bowl, mix flour, baking powder, and salt. Set aside.
  4. In another bowl, beat eggs and sugar until pale yellow, about 2-3 minutes. Stir in vanilla, yogurt, and remaining 3 tbsp Pasolivo Cucina Extra Virgin Olive Oil . Add flour mixture and stir until just combined.
  5. Stir in remaining 1/2 cup fresh pineapple and coconut. Carefully spoon over pineapple in pan and even out. Bake until toothpick inserted comes out clean, about 25-30 minutes.
