Vibrant, nourishing, and full of bold flavor, this colorful dish is ideal for summer dinners, casual entertaining, or meal prepping for the week. The spicy kick from the habanero oil and zesty lemon pepper seasoning brings the roasted veggies and salmon to life, making every bite both satisfying and refreshing.

Ingredients
  • 3 tbsp + 1 tsp Pasolivo Tuscan Extra Virgin Olive Oil, multiple divided use
  • 1 1/2 lb salmon fillets
  • 4 large eggs, boiled, cooled and quartered
  • 1 lb green beans, trimmed and cut into bite-size pieces
  • 1 lb teeny or small new potatoes, cut in half or quartered if large
  • 1/2 cup chopped red onion, medium to large
  • 1/2 cup nicoise or kalamata olive, sliced in half
  • 1 cup cherry or grape tomatoes, cut in half
  • 1/4 cup nonpareil capers, drained
  • Pasolivo Lemon Pepper divided use (1 tbsp, 1 tsp and more to taste)
  • Pasolivo Kosher Flake Sea Salt divided use (1 tbsp, 1 tsp and more to taste)
  • 9 oz. chopped romaine
Dressing:
Preparation
  1. Fire up the grill or preheat oven to 400 degrees.
  2. On a parchment lined baking sheet, toss green beans with 4 tsp Pasolivo Tuscan Extra Virgin Olive Oil, 1 tsp Pasolivo Lemon Pepper , and 1 tsp Pasolivo Kosher Flake Sea Salt . Roast for 25 minutes.
  3. On another parchment lined baking sheet, toss potatoes and red onion with 1 tbsp Pasolivo Tuscan Extra Virgin Olive Oil, 1 tbsp Pasolivo Lemon Pepper , and 1 tsp Pasolivo Kosher Flake Sea Salt . Roast for 35-40 minutes.
  4. If they fit, both pans can go side by side in the oven. Remove beans when done at about 25 minutes.
  5. While vegetables are roasting, coat salmon with 1 tbsp Pasolivo Tuscan Extra Virgin Olive Oil, 2 tsp Pasolivo Lemon Pepper , and a sprinkle of Pasolivo Kosher Flake Sea Salt .
  6. Grill, roast or pan fry salmon until it flakes easily with a fork. Time will vary based on thickness
  7. Mix all dressing ingredients in a bowl and set aside
  8. On a platter or in a shallow bowl, place romaine on the bottom. Then add green beans to a section, potatoes to a section, etc., until all ingredients are arranged.
  9. Break salmon into large pieces and place around tray
  10. Pour dressing over the top and serve
