In a medium bowl, whisk wet ingredients until combined (3 tbsp Pasolivo Cucina Extra Virgin Olive Oil, 1 egg, 3/4 cup buttermilk, and approx 1/4 cup milk).
In a large bowl, whisk dry ingredients until combined (1 cup flour, 3/4 tsp baking powder, 1/2 tsp baking soda, 1/4 tsp Pasolivo Kosher Flake Sea Salt, and 1 tbsp sugar.)
Combine wet ingredients in large bowl of dry ingredients. Whisk until combined, but don't over mix!
Pour about 1/4 cup of batter into an per pancake. When the bottom is browned, flip over and cook the other side. The heat should be adjusted so that the pancake doesn't brown too fast and doesn't cook through. The pancake is done when both sides are brown and the center is cooked. Remember to brush the pan with oil before each pancake!
