Add potatoes to large pot of cold salted water. Bring to a boil and cook approximately 15 minutes, or until potatoes are tender (time will depend on size of potatoes). Drain. Mash or rice potatoes in a large bowl. Stir in Pasolivo Classic Extra Virgin Olive Oil , cream, Pasolivo Truffle Sea Salt , and pepper. Add additional Pasolivo Truffle Sea Salt and pepper to taste.
