Our Pesto and Vegetable Foil Wrapped Chicken combines an old grilling favorite with the sophistication and burst of flavor of our citrus pesto recipe. Tailor this recipe to your guests' taste buds or build it to suit the theme of your party.
Ingredients
1 chicken breast
1 cup chopped vegetables (carrots, red onion, potatoes, etc.)
Place vegetables in the middle of a large piece of foil. Salt and pepper vegetables to taste. Place chicken breast on top and spread generously with our Pasolivo Citrus Pesto.
Wrap foil tightly around chicken and vegetables and grill until chicken reaches 165ºF.
Citrus Pesto Directions:
Add basil, mint, orange zest, garlic, walnuts, and parmesan cheese to a food processor and pulse until coarsely mixed. While processing, slowly add the olive oil and vinegar until well blended. Add additional oil if the pesto is too thick.
After processing, add the salt and pepper to taste.
To store in the refrigerator, top the pesto with a thin layer of the Pasolivo Citrus Olive oil.
