Preheat oven to 350 degrees. Wash pumpkin and cut in half, stem to base. Scrape out the seeds. Rub the 2 tsp Pasolivo Classic Extra Virgin Olive Oil on the cut side of the pumpkin. Place cut side down on a parchment-lined baking sheet. Bake for 45-55 minutes until skin is easily pierced with a fork. While pumpkin is roasting, warm 1 tbsp Pasolivo Classic Extra Virgin Olive Oil in a 6 quart saucepan. Add onion and cook until translucent. Add garlic and cook another minute. When the pumpkin is done, scrape out and place into a food processor. Then add the onion and garlic mixture, Pasolivo Kosher Flake Sea Salt , and Pasolivo Sugar and Spice . Start processing while adding chicken broth through the top. Process until smooth. Pour into the saucepan, add half & half, and heat until warm. Add additional Pasolivo Kosher Flake Sea Salt to taste. Serve.
