  1. Sauté one bunch finely chopped Kale in Pasolivo Extra Virgin Olive Oil and set aside.
  2. Cube two pounds of Red Potatoes (unpeeled) and bring to a boil in chicken broth.
  3. Add two bunches of chopped Green Onions. When potatoes are tender, mash about half of them and then add Kale and Herbs de Provence.
