Roasted Broccoli is a great addition to a healthy meal, as a side dish or a quick snack.
Ingredients
- 7-8 cups broccoli - small florets and stems
- 1/3 cup Pasolivo Lime Olive Oil
- 1 teaspoon Pasolivo Kosher Flake Sea Salt
- Freshly ground black pepper
- 2 teaspoons fresh lime juice
- 1/4 cup crumbled feta, or shredded parmesan cheese
- 2 tablespoons roasted pine nuts
Preparation
- Preheat the oven to 375ºF.
- Wash broccoli, peel stems and slice 1/2" thick.
- Cut florets into bite size pieces.
- Toss broccoli in a large bowl with Pasolivo Olive Oil and spread onto parchment lined baking sheet.
- Sprinkle with Pasolivo salt, and pepper.
- Roast for 10 minutes, stir and roast until tender, stirring every 5 minutes.
- Toss roasted broccoli in a bowl with fresh lime juice, cheese and pine nuts. Serve immediately.
