Ingredients
    Ingredients:
  • 1 red onion
  • 3 tbsp + 1 tsp Pasolivo Lemon Olive Oil
  • 2 tbsp + 2 tsp Pasolivo Smokey Spice Blend , divided use
  • 1/4 tsp + 1/8 tsp Pasolivo Lemon Sea Salt
  • 3 bell peppers (red, yellow,orange, or a combination), stemmed, seeded, and sliced in 1/2" thick slices (use 2 peppers if really large)
  • 1 1/2 lbs boneless, skinless chicken breast
  • 10-12 flour tortillas, warmed before serving
  • Toppings:
  • Shredded cheese
  • Salsa
  • Guacamole
  • Sour Cream
  • Shredded lettuce
Preparation
  1. Cut onion in half from root to top. Then cut crosswise in 1/4" slices
  2. Place peppers and onions in a large bowl. Toss with tbsp Pasolivo Lemon Olive Oil , 2 tbsp Pasolivo Smokey Spice Blend , and 1/4 tsp Pasolivo Lemon Sea Salt
  3. Spread onto a foil lined rimmed baking sheet and set aside
  4. Cut chicken in 1/4" striops. Place in a large bowl, and toss with 1 tbsp Pasolivo Lemon Olive Oil , 2 tsp Pasolivo Smokey Spice Blend , and 1/8 tsp Pasolivo Lemon Sea Salt
  5. Set oven rack 8" below broiler and heat broiler to high
  6. Broil peppers and onion until soft and beginning to get dark spots, about 15 min. Because of cariations in ovens, keep checking on the vegetables
  7. Remove vegetables from the oven and add the chicken stips in a single layer over the top. Return to oven and broil until the chicken is cooked through and browning about 5 minutes
  8. Add additional Pasolivo Lemon Sea Salt to taste
  9. Serve with the warmed tortillas and toppings
