Full Product Description

A quick, family style Mexican dish made with Pasolivo Lemon Olive Oil and Smokey Spice Blend.

Ingredients
  • 3 Tbsp. + 1 Tbsp. Pasolivo Lemon Olive Oil
  • 2 Tbsp. + 2 tsp. Pasolivo Smokey Spice Blend
  • 1/4 tsp. + 1/8 tsp. Pasolivo Lemon Salt
  • 1 red onion
  • 3 bell peppers (red, yellow, orange, or a combination), stemmed, seeded, and sliced in 1/2 thick slices (use 2 peppers if really large)
  • 1 1/2 lbs boneless, skinless chicken breast
  • 10-12 flour tortillas, warmed before serving
  • Topping:
  • Shredded cheese
  • Salsa
  • Guacamole
  • Sour cream
  • Shredded lettuce
Preparation
  1. Cut onion in half from root to top. Then cut crosswise in 1/4 slices
  2. Place peppers and onions in a large bowl. Toss with 3 Tbsp Pasolivo Lemon Olive Oil, 2 Tbsp Pasolivo Smokey Spice Blend, and 1/4 tsp Pasolivo Lemon Salt
  3. Spread onto a foil lined rimmed baking sheet and set aside
  4. Cut chicken in 1/4 strips. Place in a large bowl, and toss with 1 Tbsp Pasolivo Lemon Olive Oil, 2 tsp Pasolivo Smokey Spice Blend, and 1/8 tsp Pasolivo Lemon Salt
  5. Set oven rack 8 below broiler and heat broiler to high
  6. Broil peppers and onions until soft and beginning to get dark spots, about 15 min. Because of variations in ovens, keep checking on the vegetables
  7. Remove vegetables from the oven and add the chicken strips in a single layer over the top. Return to oven and broil until the chicken is cooked through and browning, about 5 minutes
  8. Add additional Pasolivo Lemon Salt to taste
  9. Serve with the warmed tortillas and toppings
