Our Zesty Tuscan Pasta is the perfect meal when you're coming off the trail or carb-loading for a big race. Cherry tomatoes literally burst with flavor in every bite against the backdrop of the earthy profiles of our Pasolivo Tuscan Extra Virgin Olive Oil and pungent spices in our Spicy Italian Blend. It's a community favorite, and the perfect dish for a summer date.
Ingredients
- 1 pound pasta of your choice
- 2 tablespoons Tuscan Extra Virgin Olive Oil (Formally Pasolivo)
- 2 handfuls of cherry tomatoes, whole
- 1 tablespoon Spicy Italian Blend
- 2 cups pasta water, saved
- Pasolivo Pacific Blue Kosher Sea Salt
and Pepper to taste - 2 ounces grated Parmesan, crumbled feta cheese or crumbled goat cheese
Preparation
- Cook pasta al dente according to package directions in salted water.
- While pasta is cooking, add tomatoes, Pasolivo Spicy Italian Blend and Pasolivo EVOO to a large skillet or pan. Heat on medium-high until the tomato skins begin to open, about 2-3 minutes.
- Reduce heat and keep warm until the pasta is ready. Remove about two cups of pasta cooking liquid and set aside. Drain pasta and add to pan with tomatoes and spices. Toss gently, adding pasta water as needed. Finish with some grated Parmesan, Crumbled Feta Cheese or Crumbled Goat Cheese.
