INGREDIENTS:
• 1/2 cup dry quinoa, cooked to package instructions (for added flavor, cook with broth)
• 4 Tbsp Pasolivo California Olive Oil
• 1/2 cup chopped carrot
• 1/4 cup chopped zucchini
• 1/4 cup + 1 Tbsp Pasolivo Original Nut Crumbs
• 1/3 cup scallions, sliced
• 1/4 cup chopped red pepper
• 1 cup Northern beans, rinsed and drained
• 1/2 cup garbanzo beans, rinsed and drained
• 2 tsp Pasolivo Spicy Italian Blend
• 1 tsp Pasolivo Kosher Flake Sea Salt
• 1/2 cup peas, frozen but allow to thaw while completing recipe
Pasolivo Tuscan Balsamic Vinegar to drizzle
• Entire recipe of Pasolivo Olive Oil Yogurt Sauce
DIRECTIONS:
Add all ingredients except peas, Pasolivo Olive Oil Yogurt Sauce, and Pasolivo Tuscan Balsamic Vinegar to a food processor. Pulse and stir until combined and coming together. Transfer to a bowl, then stir in the peas. Make 1/2 cup patties – pat down to 1/2”. Add a drizzle of Pasolivo California Olive Oil to pan and heat over medium-low until warm. Cook patty for 5-6 minutes, flip gently, and cook an additional 5-6 minutes, until browned.

*To serve:
• Salad - lettuce, tomatoes, cucumbers, beans. Place patty on top of salad. Top with Pasolivo Olive Oil Yogurt Sauce and drizzle with Pasolivo Tuscan Balsamic Vinegar
• Pita - stuff inside with patty, lettuce, Pasolivo Olive Oil Yogurt Sauce, and a drizzle of Pasolivo Tuscan Balsamic Vinegar
• Toast – lettuce, topped with quinoa patty, Pasolivo Olive Oil Yogurt Sauce, and a drizzle of Pasolivo Tuscan Balsamic Vinegar. Serve open face.

**For a vegan substitute, use a suitable vegan in the Pasolivo Olive Oil Yogurt Sauce recipe.
