Chocolate Chip Banana Cake with Peanut Butter Frosting

• 6 Tbsp Pasolivo Cucina Olive Oil
• 2 eggs
• 1 1/4 cup brown sugar
• 1 tsp vanilla extract
• 1/2 cup Greek yogurt
• 2 cups flour
• 3/4 tsp baking powder
• 1 tsp baking soda
• 1/2 tsp Pasolivo Kosher Flake Sea Salt
• 1 1/2 cup very ripe mashed bananas (approximately 3 medium bananas)
• 1/2 cup mini chocolate chips

Peanut Butter Frosting:
• 3 cups powdered sugar
• 1/2 cup creamy natural peanut butter
• 1/3 cup milk, plus more if needed
• 1 1/2 tsp vanilla
• 1/4 tsp salt
• Ripe banana (not overly ripe), sliced

Oil and flour two 8" round cake pans. Using a mixer, beat eggs and brown sugar together until light in color. Add Pasolivo Cucina Olive Oil, vanilla extract and Greek yogurt. Mix well. In a separate bowl, whisk all dry ingredients together. Alternately add dry ingredients and mashed banana into wet ingredients. Stir in chocolate chips. Pour into cake pans and bake until toothpick inserted in center comes out clean, approximately 20-25 minutes. Cool on cooling racks. When cake is completely cool, mix all frosting ingredients with mixer. Place cooler layer on a plate, spread a layer of frosting on top, then layer of fresh banana. Place second layer on top first, and spread frosting on top and around the sides.

Perfectly moist with melted chocolate, what could be better?  This cake is a great dessert and an equally great midmorning or after school snack.
