Curry Roasted Carrots

2 lbs. carrots, peeled and sliced to about ¼ inch
1 cup red onion, coarsely chopped
2 Tbsp Pasolivo Tuscan Extra Virgin Olive Oil
2 Tbsp Pasolivo Central Coast Curry
Preheat oven to 400 degrees F. Mix carrots and onion in a bowl. Toss with Pasolivo Tuscan Olive Oil followed by the Pasolivo Central Coast Curry. Place on a baking sheet in a single layer and roast for approximately 20 minutes, or until tender.
