Artisan Biscotti with Lemon Zest

Yield: 24-36 cookies

1/2 cup Cucina Extra Virgin Olive Oil
3/4 cup fine white sugar
2/3 cup packed brown sugar
2 tsp. vanilla paste, or vanilla zest of one lemon
2 eggs
1 Tbsp milk
2 and 2/3 cup all-purpose flour
Pinch of Pasolivo Pacific Blue Kosher Sea Salt
1 tsp. baking soda
In a small bowl, stir together the flour, salt, and baking soda. Set aside. Mix together, using a whisk, the olive oil, sugars, vanilla and lemon zest. Add the eggs and mix well. Add the milk, then the dry ingredients. Let the dough rest in the refrigerator overnight. Longer is fine. Preheat oven to 350 degrees. Roll the dough into small balls, flatten slightly and bake for 8-10 minutes until golden brown.
