Spicy Roasted Vegetables

INGREDIENTS:
1 cup Classic Extra Virgin Olive Oil
4 large onions, thinly sliced
1 large butternut squash, 1/4 inch julienne
1 large yam or sweet potato, 1/4 inch julienne
3 large parsnips, 1/4 inch julienne
6 carrots, 1/4 inch julienne
1 head cauliflower broken into small pieces
3 Tbsp Pasolivo Dukkah Blend
1 Tbsp Central Coast Curry
1 Tbsp cumin
DIRECTIONS:
In a small bowl, mix the Pasolivo Dukkah Blend, Central Coast Curry and cumin. Put all of the ingredients in a large bowl and mix well. Pour onto two 18” by 13” sheet pans and spread evenly to cover the pans. Roast for 12 minutes or until tender and some edges are crisping and carmelizing.
