Granola Pumpkin Muffins

Makes 15 muffins
1/4 cup Pasolivo Tangerine Olive Oil
2 Tbsp unsweetened applesauce
1/2 of a 15 ounce can pumpkin puree
1/2 cup plain greek yogurt
2 large eggs
1/4 cup Pasolivo Orange Blossom Honey
1/3 cup sugar
1/2 cup whole wheat flour
1 cup all-purpose flour
1 1/2 tsp. Pasolivo Sugar & Spice Blend
1 tsp. baking powder
1/4 tsp. baking soda
1 cup granola, plus more for topping
Foil muffin liners
Preheat the oven to 350 degrees. Mix dry ingredients in a bowl and set aside. Mix remaining ingredients except granola in a large bowl. After mixing well stir in dry ingredients and mix just until incorporated. Stir in granola. Spoon into lined muffin tins about 3/4 full. Press some granola on top of muffins. Bake about 25 minutes, until a toothpick inserted in center, comes out clean.

These delicious Granola Pumpkin Muffins are a healthy alternative. They combine Pasolivo olive oil as well as seasonings and are perfect for the chilly weather months.
