Hashbrown Waffles

2 Tbsp Classic Extra Virgin Olive Oil
4 cups hash browns (thawed if frozen)
1 cup chopped yellow onion
2 eggs, lightly beaten
1/2 cup shredded Parmesan cheese
1/2 tsp. Pasolivo Pacific Blue Kosher Sea Salt
1/4 tsp. ground black pepper
Mix ingredients together in large bowl. Warm waffle iron and brush or spray with oil to prevent sticking. Once heated, place ½ cup of potato mixture in each section of the iron and spread evenly. Bake until crispy and brown. Cook times will vary but 2 minutes will get you close.

Serve with olive oil basted eggs or scrambled. Makes five hash brown waffles.
