Zesty Tuscan Pasta

INGREDIENTS:
1 pound pasta of your choice
2 Tbsp Tuscan Extra Virgin Olive Oil (Formally Pasolivo)
2 handfuls of Cherry Tomatoes, whole
1 Tbsp Spicy Italian Blend
2 cups Pasta Water, saved
Pasolivo Pacific Blue Kosher Sea Salt and Pepper to taste
2 ounces grated Parmesan, Crumbled Feta Cheese or Crumbled Goat Cheese
DIRECTIONS:
Cook pasta al dente according to package directions in salted water. While pasta is cooking, add tomatoes, Pasolivo Spicy Italian Blend and Pasolivo EVOO to a large skillet or pan. Heat on medium-high until the tomato skins begin to open, about 2-3 minutes. Reduce heat and keep warm until the pasta is ready. Remove about two cups of pasta cooking liquid and set aside. Drain pasta and add to pan with tomatoes and spices. Toss gently, adding pasta water as needed. Finish with some grated Parmesan, Crumbled Feta Cheese or Crumbled Goat Cheese.
