Nut Breaded Chicken Salad

• 2 lbs boneless, skinless chicken breasts or strips
• 1 Tbsp Pasolivo Classic Olive Oil
• 4 Tbsp Pasolivo Original Nut Crumbs
• 4 tsp Pasolivo Spring Blend
• 6 cups butter or romaine lettuce
• 1 cup English or Persian cucumbers, sliced thin
• 1 cup cherry or grape tomatoes, halved
• 1 cup Feta or goat cheese, crumbled
• 1 cup croutons
Salad Dressing:
• 4 Tbsp Pasolivo Classic Olive Oil
• 2 Tbsp Pasolivo Aged Balsamic Vinegar
• 4 tsp Pasolivo Dolce Garlic Mustard
• 1/2 tsp Pasolivo Kosher Flake Sea Salt
Preheat oven to 350 degrees. Pound chicken breast with a meat mallet or rolling pin to equal thickness. Pat chicken dry with a paper towel and rub with Pasolivo Classic Olive Oil. Mix Pasolivo Original Nut Crumbs and Pasolivo Spring Blend together, and put in shallow dish. Coat the chicken breast by laying in the mixture and coating completely. Place chicken onto a baking sheet and bake about 25-30 minutes, until chicken is fully cooked. Meanwhile, make salad dressing by mixing all ingredients well. Make salad by tossing all ingredients in large bowl. When chicken is done, toss salad ingredients with salad dressing to taste. Divide onto plates and top with slices of chicken.
