Lemon Zest Olive Oil Cookies

INGREDIENTS:
• 1/2 cup Pasolivo Cucina Extra Virgin Olive Oil
• 3/4 cup granulated sugar
• 2/3 cup packed brown sugar
• 2 tsp vanilla paste, or vanilla
• zest of one lemon
• 2 eggs
• 1 Tbsp milk
• 2 2/3 cup all purpose flour
• 1 tsp baking soda
• Pinch of salt
DIRECTIONS:
In a small bowl, stir together the flour, salt and baking soda. Set aside. Using a whisk, mix together Cucina Extra Virgin Olive Oil, sugars, vanilla, and lemon zest. Add the eggs and mix well. Add the milk, then the dry ingredients. Let the dough rest in the refrigerator overnight. Preheat oven to 350 degrees. Roll the dough into small balls, flatten slightly and bake for 8-10 minutes until golden brown.
