Ingredients
1 Tbsp Pasolivo Tuscan Extra Virgin Olive Oil
1 cup plain greek yogurt
1/4 cup green onion, thinly sliced
1/3 cup English or Persian cucumber, chopped small
1 Tbsp fresh cilantro chopped
1/2 tsp Pasolivo Kosher Flake Sea Salt or Pasolivo Roasted Garlic Sea Salt
Preparation
Whisk all ingredients together. Serve with curry roasted carrots, curried vegetables, or grilled meats. Refrigerate to store after use.

Pasolivo tip: This sauce can be made to keep for up to a week. After chopping the cucumber, squeeze excess water out with a cheesecloth or paper towel. Sprinkle with salt, let rest for 5 minutes, and repeat. You can also drain any excess water or stir to mix if separation occurs.
A light, summery sauce with lime for zingy flavor and cucumber pieces for an added crunch. Made with the rich flavors of Tuscan Olive Oil and Roasted Garlic Sea Salt. A great sauce for pita chips, grilled meats, and wonderful with Pasolivo Curry Roasted Vegetables.
