Roasted Broccoli

7-8 cups Broccoli - small florets and stems
1/3 cup Pasolivo Lime Olive Oil
1 tsp. Pacific Blue Kosher Sea Salt
Freshly ground black pepper
2 tsp. fresh lime juice
1/4 cup crumbled feta, or shredded Parmesan Cheese
2 Tbsp roasted pine nuts
Preheat the oven to 375 degrees. Wash broccoli, peel stems and slice ½" thick. Cut florets into bite size pieces. Toss broccoli in a large bowl with Pasolivo Olive Oil and spread onto parchment lined baking sheet. Sprinkle with Pasolivo salt, and pepper. Roast for 10 minutes, stir and roast until tender, stirring every 5 minutes.

Toss roasted broccoli in a bowl with fresh lime juice, cheese and pine nuts. Serve immediately.

Roasted Broccoli is a great addition to a healthy meal, as a side dish or a quick snack.
