Rustic Olive Oil Crackers

• 1 1/3 cups all purpose flour, plus extra for working surface
• 2/3 cup stone ground rye flour or stone ground whole wheat flour
• 1 tsp. Pasolivo Kosher Flake Sea Salt
• 2 Tbsp.Pasolivo Lemon Pepper Blend
• 2 Tbsp. white vinegar
• 1/2 cup water
• 1/3 cup Pasolivo California Blend Extra Virgin Olive Oil

Preheat oven to 375 degrees F. Measure flours, Pasolivo Pacific Blue
Kosher Sea Salt, and Pasolivo Lemon Pepper Blend in a bowl and stir
together to blend. Add water, vinegar, and Pasolivo California Blend
Extra Virgin Olive Oil and stir well to blend. Knead until dough is soft
and well blended, about one minute. Let dough rest for 10 minutes.
On a well floured counter, marble slab, or wooden board, roll the
dough to 1/4 inch thick. Keeping the bottom well floured, transfer to a
baking sheet. Bake for 10-15 minutes until nicely browned and no wet
spots are showing. Remove from the oven and let cool on the pan.

Once cooled, gently break into rustic pieces. Enjoy with your favorite dip, spread, tapenade or by themselves.

*Cooking Tip: You can also roll and cut these crackers into squares before baking for a less rustic look.
There are endless variations to these crackers. Mix up the flours or try them with a different Pasolivo Olive Oil!
