Candied Yams

• 3 large sweet potatoes or yams, peeled and cut into 1/2" rounds
• 3 Tbsp Pasolivo Tangerine Olive Oil
• 2 Tbsp brown sugar
• 2 Tbsp Pasolivo Bourbon Barrel-Aged Maple Syrup
• 1 Tbsp gold run (optional)
• 1 Tbsp Pasolivo Winter Ambrosia Vinegar
• 3 Tbsp freshly squeezed orange juice
• 1 tsp Pasolivo Sugar & Spice Blend
Set the oven to 400 and butter a medium baking dish, set aside. In a small saucepan, combine the Tangerine Olive Oil, brown sugar, the maple syrup, rum, Winter Ambrosia Vinegar, orange juice, Sugar and Spice Blend, and the salt. Whisk together, then bring to a boil over medium heat. And then reduce to a simmer. Let it reduce for about 15 minutes. Meanwhile, prep the potatoes, and place in the baking dish. Once the sauce has thickened, pour over the potatoes, stirring to fully coat.
Cover in tin foil, and bake for 30 minutes. Remove the foil, and baste the sauce over the top of the sweet potatoes every 15 minutes, until softened and the edges have caramelized, about 45 minutes.
If you like the sweet potatoes a little extra roasted, you can broil them for the last 2 to 5 minutes until they’re browned to your liking.
