Red Potato Kale Soup

INGREDIENTS:
1 bunch Kale (exclude the spine)
2 pounds Red Potatoes (unpeeled)
3 Tbsp Tuscan Extra Virgin Olive Oil (Formally Pasolivo)
2 bunches Green Onions
2 Tbsp Pasolivo Herbs de Provence
Chicken Broth
DIRECTIONS:
Sauté one bunch finely chopped Kale in Pasolivo Extra Virgin Olive Oil and set aside. Cube two pounds of Red Potatoes (unpeeled) and bring to a boil in chicken broth. Add two bunches of chopped Green Onions. When potatoes are tender, mash about half of them and then add Kale and Herbs de Provence. ​
