Sweet Potato Hummus

• 1 large sweet potato, cooked and mashed
• 1 can of chickpeas, drained
• 1/2 cup of aquafaba reversed from chickpeas
• 1/4 cup tahini
• Juice from 1 lemon
• 3 tbsp Pasolivo Classic Extra Virgin Olive Oil
• 3 cloves garlic, roughly cut
• 1-1/2 tsp sea salt
• 2 tsp ground cumin
• 1 tbsp Pasolivo Garlic-Lemon Olive Oil
• 2 tbsp of crispy fried onions, crumbled
• add all ingredients except Pasolivo Garlic-Lemon Olive Oil and onions to food processor
• purée until smooth
• drizzle with Pasolivo Garlic-Lemon Olive Oil
• sprinkle with onions
• serve with sliced veggies or crackers
• enjoy!
