INGREDIENTS:
2 baskets of cherry tomatoes (they can be different varieties)
2 Tbsp Tuscan Extra Virgin Olive Oil (Formally Pasolivo)
2 Tbsp Pasolivo Basil Olive Oil
Pasolivo Pacific Blue Kosher Sea Salt to taste
A couple pinches of sugar
DIRECTIONS:
Preheat oven to 300 degrees. Place tomatoes in a baking dish large enough to fit the tomatoes in a single layer. Add the salt and sugar and toss together. Add the EVOO and toss again. Bake in oven for 45 minutes or until tomatoes have started to shrivel and just split (make sure they stay whole). Remove from oven and allow them to cool. Place them in a serving dish and pour the Pasolivo Basil Olive Oil on top. Serve warm or room temperature.
