INGREDIENTS:
Chimichurri Lemon Oil – Cured Chèvre:
•½ cup - Pasolivo Lemon Olive Oil
•3-4 oz. – Chèvre (Goat Cheese) – I used Stepladder Creamery’s fresh Chèvre
•1 1/2 – 2 tsp. – Pasolivo Chimichurri Spice Blend

Spring Herbs & Truffles Triple Crème:
•1/8 – 1/4 tsp. – Pasolivo Spring Blend
•Pinch – 1/8 tsp. – Pasolivo Truffle Sea Salt
•Drizzle – 1/8 tsp. – Pasolivo Blackberry Balsamic Vinegar
•1 – Stepladder Creamery’s Big Sur cheese

Smokey Spicy Curds & Cream:
•1 tsp. – Pasolivo Smokey Spice Blend + more for a pinch on each chip
•6 oz. – Cowgirl Creamery’s Cultured Curds & Cream
•1 – Bag of your favorite potato chips (I prefer Kettle style chips as they are crunchier)
•1 – Green Onion or Chives

Rustic Blue Cheese Honey Bites:
•¼ tsp. – Pasolivo Orange Blossom Honey
•½ oz. – Central Coast Creamery’s Big Rock Blue cheese
•1 – Rustic Bakery’s Artisan Crisps –Tart Cherry, Cacao Nib & Almond
•1 – Luxardo or Amarena Cherry
DIRECTIONS:
Chimichurri Lemon Oil – Cured Chèvre:
Whisk the Pasolivo Lemon Oil and the Pasolivo Chimichurri Blend together in a bowl and let rest to meld the flavors
Place the Chèvre in a Mason jar and pour the delicious melded chimichurri lemon oil over the Chèvre, making sure the oil covers the cheese
Place in the refrigerator overnight so all of the flavors have a chance to permeate the Chèvre
At least one hour prior to serving, remove from the refrigerator to get to room temp and serve on a hunk of crusty bread or toasted crostini
NOTE:
Drizzle some of the blended lemon oil over the Chèvre and the bread
You can reuse the Pasolivo Lemon Oil and Chimichurri Blend by adding more Chèvre or better yet, on a steak salad

Spring Herbs & Truffles Triple Crème:
Cut the Big Sur in half horizontally and sprinkle the Pasolivo Spring Blend and Pasolivo Truffle Sea Salt on one of the cut halves. Place halves back together and wrap in cheese paper
Marinate overnight in the refrigerator to allow all of the flavors to meld into an unctuous bite
At least one hour prior to serving, remove from the refrigerator to get to room temp
Drizzle the Pasolivo Blackberry Balsamic Vinegar over the bite or place in a small bowl for your guests to drizzle
NOTE:
To thicken the vinegar you can either reduce in a saucepan or add any dark berry jam


Smokey Spicy Curds & Cream:
Gently fold the Pasolivo Smokey Spice Blend into the Cowgirl Creamery’s Cultured Curds & Cream but don’t overmix
Place a heaping teaspoon of the cheese onto your favorite potato chip and top with a generous pinch of the Pasolivo Smokey Spice Blend
Garnish with slivered Green Onion
NOTE:
Marinate overnight in the refrigerator for a smokier flavor but make sure to remove the delicious dip an hour prior to eating


Rustic Blue Cheese Honey Bites:
Place the Central Coast Creamery’s Big Rock Blue cheese onto the center of the Rustic Bakery’s Artisan Crisps –Tart Cherry, Cacao Nib, & Almond, top with the 2 halves of the Luxardo or Amarena Cherry, then drizzle generously with the Pasolivo Orange Blossom Honey
NOTE:
Crumbling the Blue Cheese will give you more nooks and crannies for the outrageously delicious honey to stick to
I like to use the whole crisp but place the blue cheese in the center and drizzle over the center so your fingers don’t get sticky
