A crisp, refreshing salad of baby arugula tossed with lemon and Pasolivo olive oil, layered with sweet pears and finished with Parmesan for a simple, elegant dish ready in minutes.

Ingredients

  • 3 oz baby arugula (about 6 cups), washed
  • 2 pears, thinly sliced
  • 1 tsp fresh lemon juice
  • ⅛ tsp salt
  • 3 tbsp Pasolivo Lemon Olive Oil
  • Parmesan shavings, for topping

Preparations

  1. Wash and dry the arugula thoroughly.
  2. In a large bowl, whisk together lemon juice, salt, and Pasolivo Lemon Olive Oil.
  3. Add the arugula and toss until lightly coated.
  4. Gently fold in sliced pears.
