Cowboy Caviar

This delicious vegetarian dish is perfect for summer parties! Serve it with tortilla chips, on tacos, or on its own as a healthy side.

Ingredients

  • 1 cup Roma tomatoes, chopped bite-size
  • 2 avocados, peeled and chopped
  • 1/2 cup red onion, chopped small
  • 1 can black beans, drained
  • 1 can black-eyed peas or pinto beans, drained
  • Corn cut from 2 cobs, or 2 cups frozen corn
  • 1 bell pepper, cut bite size (about 1 1/2 cup)
  • 1/3 cup cilantro, chopped


Dressing:

Preparations

  1. In a large bowl, combine tomatoes, avocadoes, red onion, black beans, pinto beans, corn, bell pepper, and cilantro.
  2. In a small bowl, whisk together Pasolivo Red Jalapeno Olive Oil, lime juice, sugar, pepper, Pasolivo Sweet Habanero Vinegar, Pasolivo Kosher Flake Sea Salt, and Pasolivo Smokey Spice.
  3. Pour the dressing into the large bowl and toss until evenly coated.
  4. Let chill in the refrigerator before serving with tortilla chips.
