Grilled Shrimp, Mango, & Avocado Salad

Sweet grilled shrimp marinated in grapefruit and olive oil are paired with creamy avocado, juicy mango, peppery arugula, and a bright citrus vinaigrette for a fresh, flavorful salad perfect for warm-weather dining.

Ingredients

For the Shrimp:

For the Salad:

  • 1 avocado, cubed
  • 1 mango, cubed
  • 1 red onion, very thinly sliced
  • 2 cups arugula

For the Citrus Vinaigrette:

For Garnish:

  • Zest of 1 orange

Preparations

  1. In a medium bowl, whisk together grapefruit juice, Pasolivo California Blend Olive Oil, cilantro, Pasolivo Kosher Flake Sea Salt, and pepper.
  2. Add shrimp and toss to coat. Cover and refrigerate for 30 minutes.
  3. While the shrimp marinates, combine avocado, mango, red onion, and arugula in a large salad bowl.
  4. If using bamboo skewers, soak them in water for at least 30 minutes.
  5. Thread the shrimp onto skewers and discard the marinade.
  6. Preheat a grill or grill pan to medium-high heat.
  7. Grill shrimp for 2–3 minutes per side, or until pink and opaque.
  8. In a small bowl, whisk together Pasolivo Tangerine Olive Oil and Pasolivo Sparkling Citrus Vinegar. Season with Pasolivo Kosher Flake Sea Salt and pepper.
  9. Just before serving, toss the salad with the citrus vinaigrette.
  10. Arrange the dressed salad on a serving platter and top with the grilled shrimp.
  11. Finish with orange zest and serve immediately.
