Clean chicken thoroughly. Using a trussing needle, poke holes in the lemons and then place lemons in the cavity.
Add approximately 1 tablespoon of Pasolivo Herbes de Provence in the cavity and under the skin. Then rub approximately 1 tablespoon Pasolivo Rosemary Olive Oil on the outside of skin.
Bake at 350ºF. Depending on the weight of the hen, approximate cooking time is 40-60 minutes.
