Lemon Olive Oil Madeleines

Delicate, buttery madeleines infused with lemon zest, Pasolivo Lemon Olive Oil, and Orange Blossom Honey, chilled overnight for a tender crumb and finished with a light dusting of powdered sugar.

  1. In a medium bowl, whisk together flour, baking powder, and Pasolivo Kosher Flake Sea Salt. Set aside.
  2. In the bowl of an electric mixer, whisk eggs and sugar on medium-high speed for 1–2 minutes, then increase to high speed and whisk for an additional 2–3 minutes, until pale, thick, and doubled in volume.
  3. In a small saucepan over medium heat, melt butter with brown sugar, Pasolivo Orange Blossom Honey, and Pasolivo Lemon Olive Oil until the sugar is fully dissolved and the mixture is smooth. Remove from heat.
  4. Gently fold the warm butter mixture into the whipped egg mixture.
  5. Fold in dry ingredients in two additions until fully incorporated.
  6. Cover the batter with plastic wrap and refrigerate overnight.
  7. Preheat oven to 350°F.
  8. Brush a madeleine pan with butter and place in the freezer to set the butter coating.
  9. Spoon or pipe batter into prepared molds.
  10. Bake for 8–9 minutes, until lightly golden and springy.
  11. Remove madeleines from the pan after about 5 minutes and transfer to a cooling rack.
  12. Dust with powdered sugar before serving.
