This Red Potato Kale Soup is perfect on those chilly nights! You can even make this easy soup year-round as it is warm, tasty, and full of flavor!

  1. Sauté one bunch finely chopped kale in Tuscan Extra Virgin Olive Oil and set aside.
  2. Cube two pounds of Red Potatoes (unpeeled) and bring to a boil in chicken broth.
  3. Add two bunches of chopped Green Onions. When potatoes are tender, mash about half of them and then add kale and Herbes de Provence.
