Ingredients

  • 1 lb ground beef or turkey
  • 2 tbsp Pasolivo Red Jalapeno Olive Oil , plus more for the pan
  • 1 1/4 cup red or white onion, chopped
  • 1 garlic clove, minced
  • 1 1/2 cup red pepper, seeded and chopped
  • 1 recipe Pasolivo Pico De Gallo, dived use. (May want to double the recipe for serving)
  • 1 tsp Pasolivo Kosher Flake Sea Salt
  • 3 tbsp Pasolivo Smokey Spice Blend
  • 2 tbsp tomato paste
  • 1 can corn, drained
  • 1 15.5 oz can pinto beans, drained
  • 3 cups shredded cheese, divided use

Preparations

  1. Preheat oven to 350 degrees. Rub 9x13 baking pan with Pasolivo Red Jalapeno Olive Oil . Brown ground beef or turkey in skillet, breaking up the meat while cooking. Drain fat from the meat and place the meat in a bowl. Add Pasolivo Red Jalapeno Olive Oil , onion, red pepper, garlic, and Pasolivo Kosher Flake Sea Salt to skillet and cook 6-7 minutes, until onion is translucent. Add the reserved ground beef, Pasolivo Smokey Spice Blend , corn, tomato paste, pinto beans, and 1 1/2 cup Pasolivo Pico De Gallo. Cook 2-4 minutes, then stir 1 cup shredded cheese into mixture. Pour beef mixture into prepared baking pan, top with remaining 2 cups of cheese, and bake for 18-20 minutes. Serve with chopped lettuce, tomatoes, sour cream, tortilla chiops, fresh cilantro, Pasolivo Pico De Gallo, and Pasolivo Red Jalapeno Olive Oil .

*If using ground turkey breast, add 1 tbsp Pasolivo Red Jalapeno Olive Oil to a pan with meat and do not drain.
