Tuscan Sausage & Potato Soup

This savory, hearty soup is made with our peppery Tuscan EVOO and Central Coast Broth Blend, crafted with nutritional yeast for a rich, satisfying flavor. Perfect for cozy fall meals, it’s comfort in every bowl.

Preparations

  1. Preheat a large pot over medium heat. Drizzle with Pasolivo Tuscan Extra Virgin Olive Oil and warm for about 1 minute.
  2. Add in the diced onions and sauté until the onions are soft and translucent, about 5 minutes. Stir in the minced garlic and cook for an additional minute, making sure the onion and garlic do not burn.
  3. Add the sausage to the pot, breaking it apart as it cooks. Continue until browned and fully cooked, about 10 minutes.
  4. Stir in the quartered potatoes and cook for 2-3 minutes, until they begin to warm and soften.
  5. Increase the heat to high. Pour in the beef broth, Pasolivo Central Coast Broth Blend, Pasolivo Spicy Italian Blend, and bay leaves. Bring to a boil.
  6. Reduce heat to medium, cover the pot, and cook until the potatoes are tender when pierced with a fork, about 20-25 minutes.
  7. Lower the heat to low. Slowly stir in the milk and chopped spinach. Season with Pasolivo Himalayan Sea Salt and ground black pepper to taste.
  8. Once the spinach is slightly wilted and dark green, remove the bay leaves and serve.
