In a small bowl, stir together the flour, salt, and baking soda. Set aside.
Mix together, using a whisk, the olive oil, sugars, vanilla and lemon zest. Add the eggs and mix well. Add the milk, then the dry ingredients.
Let the dough rest in the refrigerator overnight. Longer is fine.
Preheat oven to 350ºF.
Roll the dough into small balls, flatten slightly and bake for 8-10 minutes until golden brown.

The pic shows almonds in the biscotti (yeah!), but I don’t see a quantity or preparation for them.
