Creating Extra Virgin Olive Oil

Harvest is one of the most exciting times of the year! Our olives are picked at their prime and pressed within hours at our on-site olive mill, capturing the natural health benefits and rich flavor of the olives. We have a zero-waste milling process, meaning all of our leftover waste is reused or repurposed. The pomace (paste) is separated from the olive oil in the press and repurposed as a natural fertilizer all over the ranch. The waste water is lab-tested for safety and then applied back to the land as well. So, you can think of it as a full circle: the waste produced from the milling process is used to help our growing trees produce new olives for the following milling season!

At Pasolivo, our passion is hand-crafting the healthiest, most delicious olive oils possible. One taste of our oils and you will experience for yourself the hallmark grassiness and pungency of beneficial polyphenols that are present in a true premium olive oil.

The harvest experience is great for the entire family! Although you do not need make reservations for groups under 10 during harvest season, we still recommend calling ahead to make sure we are harvesting on the day of your visit. When you call ahead, please inform the tasting staff if your group would like to go on the harvest tour, and we will be happy to give you some behind-the-scenes experiences! If you have more than 10 people in your group, please call us to schedule a group harvest tour and tasting.

  • We grow, harvest, mill, and bottle all of our olive oil on-site to give you the freshest flavor possible.

  • Our olives are always hand-picked at harvest to ensure the highest quality. While machinery may be faster, it can damage the fruit—something we simply won’t compromise on.
