Lemon Blueberry Baked Oats with Almond Butter Swirl

Quick, easy, and delicious. Blend then bake. Baked oats are a perfect on-the-go breakfast and taste just as good reheated the next morning.

Ingredients

  • 1 cup rolled oats
  • ¼ cup unsweetened almond milk
  • ¼ cup nonfat Greek yogurt
  • 2 Tbsp. Lemon Olive Oil
  • 2 Tbsp. Orange Blossom Honey
  • 1 overripe banana
  • 1 egg
    1 tsp. baking powder
  • pinch of Kosher Flake Sea Salt
  • 1 tsp. lemon zest
  • 1 tsp. vanilla extract
  • 1 cup blueberries
  • 2 Tbsp. almond butter

Preparations

  1. Preheat the oven to 375°F.
  2. Blend the oats into a flour, about 30 seconds.
  3. Add remaining ingredients to the blender except for the blueberries and almond butter. Blend until smooth. Do not over blend or the final product will be tough.
  4. Pour the batter into 2 small greased ramekins or a 7.5 by 6 inch baking dish.
  5. Drizzle the almond butter over the top and swirl with a toothpick. Top with the blueberries.
  6. Bake for 25 to 30 minutes: until fully set in the middle but still moist.
  7. To serve, dollop with vanilla yogurt and a drizzle of Lemon Olive Oil while still warm. Enjoy!
  8. Store in an air-tight container for up to 4 days in the fridge.
