In a mixing bowl, put the first 6 ingredients (olive oil through the egg), and blend well with a mixer.
In a small bowl, mix flour, baking powder, and salt.
Then stir into the wet ingredients until incorporated.
Drop by tablespoon onto a parchment-lined baking sheet.
Then use a fork to gently press down.
Bake 10-11 minutes until edges are lightly brown.

Light crumbly texture. Think more peanut butter would have helped give it more flavour.
Would have liked to have seen other people’s comments before baking this recipe.
