Zucchini Fritters

Perfectly crisp and flavorful zucchini fritters made with Pasolivo Lemon Olive Oil.

Ingredients

  • 2 1/2 Tbsp. Pasolivo Lemon Olive Oil, divided use
  • 3 cups shredded zucchini, squeezed dry
  • 1 Tbsp. minced jalapeno
  • 1/3 cup chopped onion, or green onions
  • 2 Tbsp. chopped fresh cilantro
  • 1 egg, lightly beaten
  • 1/2 tsp. Pasolivo Lemon Salt
  • Several grinds freshly ground pepper

Preparations

  1. Mix 1 Tbsp. Pasolivo Lemon Olive Oil with remaining ingredients
  2. Warm remaining 1 1/2 Tbsp. Pasolivo Lemon Olive Oil in a large fry pan, over medium heat
  3. Scoop 1/4 cup zucchini mixture into the fry pan and flatten lightly
  4. Cook about 3-4 minutes until lightly browned. Flip and cook until browned and lightly crispy. Check them often so they don't get too browned
  5. Serve immediately
