Mix 1 Tbsp. Pasolivo Lemon Olive Oil with remaining ingredients
Warm remaining 1 1/2 Tbsp. Pasolivo Lemon Olive Oil in a large fry pan, over medium heat
Scoop 1/4 cup zucchini mixture into the fry pan and flatten lightly
Cook about 3-4 minutes until lightly browned. Flip and cook until browned and lightly crispy. Check them often so they don't get too browned
Serve immediately
