For years, I've been struggling with pouring just the right amount of olive oil from my Pasolivo lemon olive oil. Then a light bulb appeared over my head, and I realized that there's a product to solve that issue. The pour spout works very nicely. It automatically closes up and apparently maintains the integrity of the olive oil without having to put a cover on the bottle. If you don't have one, buy one. It's not expensive.
