Eggplant Planks

Crispy on the outside and tender on the inside, this flavorful dish makes a perfect appetizer, side, or light main for weeknight dinners, game nights, or casual gatherings. The savory crunch from the nut crumbs paired with a rich marinara dipping sauce makes it a crowd-pleasing favorite that's both wholesome and satisfying.

Preparations

  1. Preheat oven to 400 degrees
  2. Cut eggplants into planks, approximately 1/2"X1/2"
  3. Mix Pasolivo California Extra Virgin Olive Oil and egg whites, then pour into large Ziploc bag. Add eggplant planks and toss evenly.
  4. Place eggplant on parchment-lined baking sheet. Sprinkle 1/2 of the Pasolivo Italian Nut Crumbs onto eggplant. Then toss and sprinkle the remaining half. Sprinkle generously with Pasolivo Kosher Flake Sea Salt.
  5. Bake for 15 minutes, turn eggplant over and bake another 15 minutes or until golden brown.



* Serve with warmed Pasolivo Artichoke and Olive Marinara Sauce
